Description:
Grissini are typical Italian bread sticks served as an appetizer or as a snack. The origin of these crispy sticks come from Turin in the 17th century.

• 225g wheat flour
• 135 ml warm water
• 30 ml olive oil
• extra virgin
• 1.5 tsp. salt

• 1.5 Tbsp. grated parmesan cheese (optional)

Mix yeast and water and wait for 10 minutes. Place flour and salt in a bowl. Add the yeast/water mixture and olive oil; work everything into a smooth and slightly sticky dough. Knead the dough on a floured surface for about 10 minutes, until it is smooth and elastic.
Add parmesan cheese according to taste and knead into the dough. Roll the dough out to about 15 cm x 20 cm on a floured surface. Spread with olive oil, cover and stand for about 1 hour, until it has doubled in volume.
Cut the dough into two equal pieces along the short side. Then cut each half into 10 strips.
Shape each piece of dough into a roll of about 30 cm and place on a slightly greased baking tray.
Once the baking tray is filled up, spread olive oil on each piece. Stand the baking tray in a warm place, uncovered, for about 15 minutes and allow the dough to rise a little.Bake the Grissini for about 10 to 15 minutes at 200 °C, until they are brown.
Allow to cool on a cake rack.
Note:
You might need two baking trays.
The Grissini should be crispy and brittle.
